Remove the mixture from the oven and allow it to slightly cool

Ingredients:

1 cup fine whole wheat flour

1/3 cup of brown sugar (preferably muscovado)

½ tsp baking powder

2/3 cup chopped walnuts

¼ tsp iodized salt

2 medium-sized bananas, sliced

¼ cup of soy or almond milk

1 medium egg, beaten slightly

Procedure:

Preheat oven to 175 degrees C or 350 degrees F

In a mixing bowl, mix flour, baking powder, sugar, salt, and walnuts

In another mixing bowl, mash the bananas using a fork or a wire whisk

Slowly add in beaten egg and milk to the mashed bananas

Slowly pour in the dry ingredients to the banana mixture

Line a muffin tray with muffin liners

Pour in the batter to the muffin tray and bake for 30-40 minutes or until golden brown

3 medium-sized diced organic apples

6 cups of vegetable broth (preferably sodium-free or low-sodium)

Procedure:

In a medium saucepan over medium heat, pour in oil and sauté onions until lightly golden in color

Slowly add in the broth, increase heat to medium-high and bring the mixture to a boil

Once boiling, slowly add in the apples, leeks, rosemary and thyme

Reduce heat to medium and simmer for about 10 minutes

Transfer to a bowl and serve

•Asparagus with Walnuts and Quince Jam

Ingredients:

2 lbs of trimmed and washed asparagus spears

2 tsp freshly grated ginger

2 tbsp quince jam

2 tbsp extra virgin olive oil

1 tsp freshly squeezed lemon juice

3 tbsp chopped walnuts

Dash of salt and pepper to taste

Procedure:

Prepare the steamer with enough amount of boiling water

Place the asparagus inside the steamer and steam it until asparagus is crisp and slightly tender (around 3-5 minutes)

Transfer the steamed asparagus to a serving plate

In a mixing bowl, whisk together quince jam, olive oil, ginger, lemon juice, salt and pepper

1 ½ cups of black beans, cooked

4 US large eggs

1 tbsp mint extract

1 tsp stevia (or muscovado sugar)

5 tbsp canola or vegetable oil

1/3 cup raw honey

6 tbsp unsweetened cocoa powder

1 tsp baking powder

½ tsp baking soda

A pinch of salt

Some mint leaves for garnish

Procedure:

Preheat oven to 175 degrees C (350 degrees F)

In a blender, place black beans, stevia, honey, mint extract, canola oil, and 2 eggs

Blend until mixture is smooth

In a separate mixing bowl, beat the remaining two eggs

•Apple and Raspberry Crumble

Ingredients:

5 large thinly sliced apples

1 cup fresh raspberries

2 cups fresh apple juice

2 cups of rolled oats

2 tbsp unsalted butter

2 tbsp muscovado sugar

2 tsp ground cinnamon

½ tsp ground cloves

Procedure:

Preheat the oven to 350 degrees F

Butter the bottom and sides of a baking dish and arrange apple and raspberry slices

Pour in apple juice of the arranged fruits

In a mixing bowl, mix together rolled oats, all spices, and sugar

Cut in the butter using your fingers to the oats mixture

Top the apple and raspberry dish with the crumble and bake for 45-60 minutes
